Dishes are refined and elegant without as much – if any – of the culinary molecular engineering that the Demon Chef is known for. Whole Boston Lobster with Mangosteen, Tomato and Spicy Thai Dressing ($58) offers a taste of Thailand, while the Korean-inspired Spicy Tuna Tartare ($26) with housemade gochujang delivers on flavour, spice, and texture.
