Festive Season Dining at the Fullerton Bay Hotel

With the festive season just around the corner, mamas looking to celebrate should consider rounding up a group to dine at Clifford Brasserie at the Fullerton Bay Hotel Singapore. With stunning views overlooking Marina Bay, I headed to this chic, upscale space to try their luxurious festive season degustation menu – the perfect way for mamas to celebrate another year of job well done.

This yuletide celebration feast starts with a truffle-crusted scallop with a small serving of Oscientra caviar. The Iberico chip on the cauliflower gelee could be a touch crispier, but ithas a slight tinge of saltiness that lends a flavourful encore to the dish.

Truffle lovers (and who doesn’t love truffles?!) will be delighted to find that each scallop comes with a hearty serving of the delicious morsel, plus the dish is topped with white truffle shavings as well! This was definitely a highlight of the four courses.

Spoiling my taste buds next was Duo of Foie Gras. I’m not typically a fan of most foie gras served here in Singapore, and was even more hesitant to learn one of the duo was served in the form of a mousse, a texture I generally find unappetising. I was delighted at first bite to discover how deliciously smooth the mousse was, and the yuzu jelly paired with it gave the dish a refreshing lightness. Additionally, the pan-seared foie gras was soft and nicely done, and definitely lived up to my expectations.

For the main course, there was a choice between pan-roasted turbot on celeriac mousse with eggplant confit, or truffle-crusted veal tenderloin. I was lucky enough to try both! The latter was a sure winner for me, though the fish was mouth-watering in its own right.

Due to its lower fat content, it is easy to overcook veal, but in the skilled hands of Clifford’s chef, the tender meat was done perfectly. While it did not look as appetising upon first cut and appearance, it was cooked to complete precision — soft and flavourful. The truffle crust was just perfect, not overpowering, but simply allowing you to savour every bite and the juices of the meat.

Do keep some room for the dessert, as the La Barre Mont Blanc seals the entire meal. Chestnut lovers would enjoy the two-day-old, soaked-in-brandy-chestnuts, and the mont blanc – while a tad too dry for my liking – was a nice, light ending to the sumptuous meal.

Clifford is the perfect place to soak in the festive season’s ambience. In the daytime, the opulent leather banquettes and chandeliers evoke the finest of the French dining experience, while in the evening the lofty 10-metre high windows offer the city’s best view of the sparkling Marina Bay skyline. Add impeccable service on to the delicious food, and it’s an experience that’s definitely cause for celebration.

Speaking of celebration, be sure to visit the Fullerton Bay Hotel at 7pm on Friday, 28 November for its Christmas Light-Up Ceremony, featuring carols, a handbell choir, and complimentary mulled wine, hot chocolate and Christmas cookies!

The above dishes will highlight a number of special festive season menus at Clifford. From 28 November to 23 December, and from 26-30 December, enjoy at 4-course degustation festive dinner priced at $98++ per person. On December 24 and 25, enjoy a 5-course degustation dinner including one glass of Champagne per diner, for $188-$198++ per person.
