Terri-Anne Leske is one of those mamas who makes it look easy: with three kids under 3, she’s a natural hostess, self-taught photographer and food lover who started a recipe blog called Carrotsticks & Cravings back in 2013. A country girl at heart hailing from Australia, she’s big on fresh, healthy ingredients, and says her food philosophy is all about balance: “cooking super-healthy food most of the time, and enjoying a bit of decadence some of the time”.

Having partaken in a few of her insanely delicious (and surprisingly wholesome) snacks at our most recent Mama Meet Up and first Pregnancy Club coffee morning, we are all major fans here at Sassy Mama!

With this in mind, we’re so excited to help spread the news that Terri-Anne is about to publish her first cookbook, Carrotsticks & Cravings: My Creative Kitchen! She’s pulled together 50 of her fave recipes including breakfasts, snacks, salads, sweets and main courses – and we’re seriously drooling over each and every one of them.

Not only do recipes like “Green Quinoa Tart”, “Raw Goji, Dark Chocolate & Nut Balls”, “Pomegranate Guacamole”, and “Kale, Quinoa & Pumpkin Soup” all sound delicious, they all look delicious, too! (Check out the blog or the Facebook page to see for yourself, but consider yourself warned: you will get hungry!). To give you a preview of the kind of awesomeness you can expect, here’s one of Terri-Anne’s most popular recipes: Peanut Butter & Chocolate “Ice Cream”

6 large ripe frozen bananas
2 tbsp melted dark chocolate plus 1 tsp extra for topping
1-2 tbsp peanut butter plus 1 tsp extra for topping

Pre-freeze ripe bananas chopped into 2 inch pieces in ziploc bags for a minimum of 6 hours
Remove from freezer. Add to food processor or powerful blender and blitz with 2 tbsp melted chocolate, 1-2 tbsp peanut butter until smooth and fully combined
Scoop mix into freezer container. Drizzle top with extra melted peanut butter and chocolate
Re-freeze. Scoop like ice cream when ready to serve!
Makes one small tub

Tip: Store six chopped ripe bananas in the freezer for a quick and easy dessert to whip up at dinner parties! Serve straight after blending with fresh berries and melted chocolate or toppings of your choice.
