Begin the evening with Cape Grim Tenderloin Tartare served with potato chips and togarashi and continue your meal with succulent grilled Tiger Prawns that are imported from Skull Island in Australia’s Northern Territory and are served with garlic chives and moreish trio pepper sauce.

For mains, you will get to enjoy the Pan-seared Australian Barramundi with shiitake mushroom, hispi cabbage and umami broth and a 24-hour marinated Roasted Spiced Dorper Lamb Rack, coated in an array of spices including sumac, harissa and Ras el hanout. End your meal with a well-loved Australian classic dessert, the Pavlova, an airy meringue-based dessert with a refreshingly sweet and citrusy twist of mangoes, yuzu curd and coconut chantilly.
