The best Thai on the island? David Thompson’s Long Chim opens in Singapore

EatPost Category - EatEat - Post Category - Eating OutEating Out

Long Chim from celebrity chef David Thomson is up and running at Marina Bay Sands. It just might be the best Thai restaurant in Singapore!

Long Chim is the newest opening by David Thompson of Bangkok’s Nahm (#7 on the list of Asia’s 50 Best Restaurants). Meaning “come and sample” in Thai, Long Chim serves casual Thai street food with beautifully bling digs on the second floor of MBS. It’s all dimly lit interiors, a gorgeous asymmetric wooden ceiling, golds, blacks and then of course some (very slick) kitchen décor – it is street food after all.

Drinks wise
You’re first greeted by the glitzy cocktail bar, which is yet to be officially launched as the lead bartender is still being wooed. For now you can order up virgin quenchers like the Thai Iced Tea made with Ceylon black tea, hand-pressed coconut milk, Thai spices and orangeflower water ($8); or alcoholic tipples ($18) like Sticky Rice Sour of Diplomatico Reserva rum, Sato rice wine, mango, pandan and homemade coconut milk or Tears of the Black Tiger with Mezcal, sherry, tamarind, peanut orgeat, and bitters.

Street Food
The menu mixes well-known favourites (Pad Thai and Green Curries) with more unusual dishes like Cured Pork Fritters with Ginger ($13), Chiang Mai Chicken in Cabbage Wraps ($10), and Coconut Turmeric Curry with Mashed Prawn ($24). If you’ve been lucky enough to find this kind of food on Thai streets then we salute you (you lucky devil!). Prices are ridiculously decent, especially given this is David Thompson who had a Michelin star for his now-closed Nahm in London.

Dishes here are slap-the-table good and they don’t pansy around with the chillis – you need to like it spicy (and we do!). Don’t miss the Grilled Lamb Ribs ($25) drenched in a deep flavoured curry sauce with melt-in-your-mouth meat, and the perfectly balanced Green Papaya Salad ($17). For dessert, the simple Banana Roti ($10) hits the spot with its combination of crunchy roti and sweet soft bananas; the Durian Ice Cream ($15) with its frozen custard creamy texture will convert even the wariest fiends of this ‘king of fruits’. Best of all, if you’re heading to MBS for a show you can stop by for some post-theatre noodles and Thai snacks for supper – Long Chim will be open till 2am in true Bangkok street food style. We are head-over-heels!

Sassy Mama DIY: Raincloud Mobile⠀
Swipe left for a step by step guide with instructions below.⠀
⠀
Materials needed: Recycled Cereal Box, Egg Carton, Blue Acrylic Paint, Paintbrush, Cotton Balls, String, White Glue, Scissors, Pencil, Hole Puncher, Pen and White Paper (optional)⠀
⠀
Step 1: Cut cups off the egg cartons, paint the outsides of the cups blue. Once done, place it aside to allow them to dry.⠀
⠀
Step 2: Open and flatten your cereal box. Using the pen or pencil draw a cloud on one side, then cut out. You can paste a sheet of white paper on both sides to cover up the design of the cereal box (optional). Punch a hole in the centre at the top of the cloud and some holes at the bottom (the number of holes depends on how many raindrop strands you want to attach).⠀
⠀
Step 3: Glue cotton balls all over the cloud. Remember to leave the holes you have punched uncovered, and glue the cotton balls close together.⠀
⠀
Step 4: Once the egg carton cups are completely dry, use your pencil to poke holes in the top. Then string them together. String the cups from bottom up, leaving about 5-10 cm of additional string at the top. This will make it easier for you to attach the raindrop strands onto the cloud.⠀
⠀
Step 5: Tie your raindrop strands onto the bottom holes of your cloud, cut off any additional string. Attach string to the hole on top, this will allow you to hang your completed raincloud mobile wherever you wish! Taadaaa!
