Chef de Cuisine Davide Giacomelli has worked at multiple Michelin-starred restaurants across Europe while Chef Nelly Robinson is an international award-winning top chef from Australia – so you’re in for a treat with this six-course menu complemented by a wine pairing menu with Singapore’s finest wine distributor PIVENE.
Start with a bite-sized hors d’oeuvre consisting of Diced Wagyu Beef Tartare, Carbonara Espuma and Crispy Guanciale by Chef Davide before diving into the Sotto il Mare by Chef Nelly, a refreshing appetiser of Poached Crab, designed to look like a rockpool. Mains include the Farro, Gamberi Imperiali e Pesto Verde by Chef Davide – a unique risotto-like dish of Farro slow-cooked in King Prawn Stock, and topped with king prawns. Moving on to Chef Nelly’s Spezia Del Mare, Kingfish tandoori – a star dish marinated for 48 hours in tandoori spice, flamed with smoked yoghurt and served with puffed lobster crumbs, followed by Chef Davide’s Manzo Maturato, Ostriche, Funghi e Salicornia, Dry-Aged Wagyu Beef cooked in red wine reduction in oyster and borage dressing topped with glasswort, raw mushrooms.
Leave room for a show-stopping dessert of peppermint and chocolate forest by Chef Nelly – a sweet ending inspired by his visit to the garden city as a child, where he was blown away by the vast woodlands and greenery.
This four-hands menu can be paired with exquisite wines selected by Singapore’s finest wine distributor, PIVENE. Each of the handpicked wines is highly rated above 90 points – including Dominique Portet Fontaine Rose Vintage 2021, a pretty, light salmon pink rosé with a gentle, creamy mouthfeel, and fine natural acidity and Broglia Gavi di Gavi Villa Broglia Vintage 2020, a wine characterised by its fresh fragrance, fruitiness, with undertones of white flowers and almonds.
