Indian cuisine has always been known to be diverse and extraordinary as it reflects a complex layering of flavours developed through more than 5000 years of history and from native ingredients unique in taste and aroma.
The culinary team that presents the popular Indian Curry Buffet at The Fullerton Hotel’s The Courtyard will be whipping up a spread of authentic Indian specialties together with Guest Chef De Cuisine Nurul Bashar and Senior Sous Chef Prakash Chandra Kabdaal of The Lodhi New Delhi.
Feast on Indian dishes like Shorba Hajrat Mahal (Mixed Vegetables with Green Apple Soup), Raan-E-Awadh (Oven-roasted Whole Lamb Leg stuffed with Garlic Flakes and Dried Plum), Tandoori Ajwaini Lobster (Clay Oven-cooked Carom Seed Lobster), Bengali Fish Curry (Rahu Fish Mustard Curry), Hyderabadi Chicken Dum Biryani (Fragrant Chicken with Spices and Saffron Basmati Rice), Bharwan Paneer Tikka (Indian Cottage Cheese, Ginger and Pomegranate Molasses), Jhinga Kalimirch (Black Pepper Tiger Prawns Marinated with Cream and Yoghurt), Dal Makhni (Overnight Tandoor-cooked Creamy Black Lentils with Butter and Fenugreek), Chingri Malai Curry (Prawns cooked in Coconut), Mirchi Baigan Ka Salan (Baby Eggplant in Rich and Spicy Peanut and Coconut Gravy) along with an assortment of Indian pickles, tangy chutneys and papadums.
For those with a sweet tooth, traditional Indian desserts such as Rose Phirni (Aromatic Rose Basmati Rice Custard), Moong Dal Halwa (Lentil Urad, Clarified Butter, Cashew Nuts and Sugar), Lauki Halwa (Bottlegourd cooked in Condensed Milk), and Sahi Tukra (Fried Bread dipped in Condensed Milk and Cardamom) will end the meal on a sweet note.
In addition, Town Restaurant’s popular selection of local heritage dishes, seafood on ice, salads, pastas, pizzas and cheeses will also be available on the buffet line.
