Dehesa may not be on your radar, it’s tucked away on North Canal Rd and is saucily dark inside with good low lighting. If it’s not a restaurant you know, mark it down now. Chef Jean-Philippe Patruno, or “JP” as he is known to foodies and friends, opened Dehesa with its “nose to tail” menu a few years ago. This year, the focus is more on bold flavours and big plates. Chef JP is a master in the kitchen – dish upon dish is a flavourful delight. From the Jamon De Bellota carved up on the counter to more unusual dishes like the Crispy Tripe ($14). Now let me first say this – offal is not something I ever crave or often succumb to. If you feel the same way, don’t run just yet. I promise dishes at Dehesa (like the aforementioned tripe which is fried so it’s deliciously crunchy and crisp, doused in chillies and a ridiculous amount of garlic), will make you change your mind. For those who dare not, (really you should) but there are other dishes on the menu to entice like the Dehesa Bravas Potatoes ($12) of steamed layered potatoes that are then fried and are one of the better renditions on the island, and the absolute winner of a dish the Carabineros (serves 2 at $36) umami lobster bisque drenched arroz topped with deep-sea Giant Red Sweet Prawns, and the equally good Dehesa Octopus ($28), of neat thin slices of grilled octopus, on top of smashed potatoes pepped up with a caper vinegary dressing, with shavings of lardo that are blowtorched at your table. Sassy Mama DIY: Raincloud Mobile⠀

Materials needed: Recycled Cereal Box, Egg Carton, Blue Acrylic Paint, Paintbrush, Cotton Balls, String, White Glue, Scissors, Pencil, Hole Puncher, Pen and White Paper (optional)⠀

Step 1: Cut cups off the egg cartons, paint the outsides of the cups blue. Once done, place it aside to allow them to dry.⠀
⠀
Step 2: Open and flatten your cereal box. Using the pen or pencil draw a cloud on one side, then cut out. You can paste a sheet of white paper on both sides to cover up the design of the cereal box (optional). Punch a hole in the centre at the top of the cloud and some holes at the bottom (the number of holes depends on how many raindrop strands you want to attach).⠀

Step 3: Glue cotton balls all over the cloud. Remember to leave the holes you have punched uncovered, and glue the cotton balls close together.⠀

Step 4: Once the egg carton cups are completely dry, use your pencil to poke holes in the top. Then string them together. String the cups from bottom up, leaving about 5-10 cm of additional string at the top. This will make it easier for you to attach the raindrop strands onto the cloud.⠀

Step 5: Tie your raindrop strands onto the bottom holes of your cloud, cut off any additional string. Attach string to the hole on top, this will allow you to hang your completed raincloud mobile wherever you wish! Taadaaa!
