Dehesa may not be on your radar, it’s tucked away on North Canal Rd and is saucily dark inside with good low lighting. If it’s not a restaurant you know, mark it down now. Chef Jean-Philippe Patruno, or “JP” as he is known to foodies and friends, opened Dehesa with its “nose to tail” menu a few years ago. This year, the focus is more on bold flavours and big plates. Chef JP is a master in the kitchen – dish upon dish is a flavourful delight. From the Jamon De Bellota carved up on the counter to more unusual dishes like the Crispy Tripe ($14). Now let me first say this – offal is not something I ever crave or often succumb to. If you feel the same way, don’t run just yet. I promise dishes at Dehesa (like the aforementioned tripe which is fried so it’s deliciously crunchy and crisp, doused in chillies and a ridiculous amount of garlic), will make you change your mind. For those who dare not, (really you should) but there are other dishes on the menu to entice like the Dehesa Bravas Potatoes ($12) of steamed layered potatoes that are then fried and are one of the better renditions on the island, and the absolute winner of a dish the Carabineros (serves 2 at $36) umami lobster bisque drenched arroz topped with deep-sea Giant Red Sweet Prawns, and the equally good Dehesa Octopus ($28), of neat thin slices of grilled octopus, on top of smashed potatoes pepped up with a caper vinegary dressing, with shavings of lardo that are blowtorched at your table. Boom. So so good. Dehesa is rolling out an all-you-can-eat brunch ($58) any minute now too. Highlight that on
