Tiong Bahru Bakery’s new savoury croissants give us yet another reason to visit

It’s a well known fact that we are huge fans of Tiong Bahru Bakery – in particular their legendary croissants – here at Sassy Mama HQ, so when they invited us to come by and try their new savoury croissant sandwiches for lunch, we said “You had us at hello!”.

The croissants – light, flaky, buttery, moist – are good enough on their own, but these aren’t just croissants cut in half with stuff in the middle. Oh no, these croissants have gourmet ingredients baked into them. From xiao long bao to ramen, they’ve managed to put their spin on some of our favourite lunch dishes – all in handy little bite size noshables.

For $12, you get a pair of sandwiches, plus a fresh side salad with Yuzu dressing. Not a bad deal considering how full we were afterwards! The sandwiches are freshly baked and kept in the display oven for just 60 minutes – if no one snaps them up they come out of the display case (we’re told that hasn’t been too much of an issue – not surprising given how tasty they were!).

Our favourite was the “Rolling Dumpling”, a xiao long bao-inspired combo of minced pork filling and sesame seeds, baked till juicy and golden, and then topped with a dash of ginger, black vinegar sauce and fresh chives. We found this one sweet but not cloying, the succulent pork balanced out by the bright spring onion.

Our favourite part of the “Flying Pig” sausage roll was the delicious baked-in layer of caramelized onion jam, which perfectly complemented the spicy pork sausage and tangy sun-blushed tomatoes. This is definitely the choice for those who prefer their sandwiches on the spicy side.

We were also big fans of the “Cheeky Chicken”, a modern spin on traditional egg salad, highlighted by a perfectly runny ramen egg, along with a dollop of mayo, umami Bonito flakes and a sprinkle of Togarashi. We were so impressed by how well the egg was cooked, as this is a bakery, not a Japanese ramen shop, after all!

The “Jumping Fish”, with salmon, spinach and ricotta all baked into the flaky dough, was good, but the smoked salmon and crème fraiche somehow tickled our tastebuds less than the other three options. We suspect this may be a matter of taste more than anything, though.

The sandwiches are available daily from 11:30am-3pm, mama, satisfying a whole range of lunch eaters and afternoon snackers. You can try out the new savoury croissants ($12 for a pair with salad, or just $4.50 per piece) at all three Tiong Bahru Bakery locations. Bon appétit!
